Step-by-Step Recipe (Serves 2):

Ingredients:

  • Protein: 2 lean chicken breasts 🍗
  • Veggies: Broccoli 🥦, zucchini 🥒, bell pepper 🌶️, cherry tomatoes 🍅
  • Grain: 1 cup quinoa 🍚
  • Seasonings: Olive oil 🫒, dried herbs 🌿, garlic powder 🧄, salt & pepper 🧂
  • Garnish (Optional): Fresh parsley 🌱, lemon wedges 🍋

Instructions:

  1. Preheat Oven:
    Preheat oven to 400°F (200°C) 🔥.
  2. Cook the Quinoa:
    • Rinse 1 cup quinoa under cool water 🚰.
    • In a pot, combine quinoa + 2 cups water 💧.
    • Bring to a boil, then simmer with lid on for about 15 mins until water is absorbed ✅.
    • Fluff with a fork and keep warm 🍴.
  3. Prep the Veggies:
    • Chop broccoli, zucchini, bell pepper into bite-sized pieces and add cherry tomatoes 🥦🥒🌶️🍅.
