Its that time of year again when all food and fitness regimes take a small break to make way for a little less moving and little more eating. Generally whenever you see the word healthy in front of a recipe, its easy to let out a little sigh as the next thought is usually, healthy yes – but half the taste too. This is not the case for this super easy and healthy yoghurt bark recipe cleverly made by our Health & Performance Nutritionist Stephanine Hage. Make this treat for all of your family friends and eat it with little guilt and maximum enjoyment.
Ingredients:
2 cups thick Greek yoghurt
1-2 teaspoons honey
1 teaspoon vanilla extract
1 cup raspberries (fresh or frozen)
½ cup dried cranberries
½ cup desiccated coconut or coconut flakes
½ cup pistachios
Method:
1. Line a baking tray with baking paper.
2. Mix the yoghurt, vanilla and honey in a bowl, and stir through the raspberries.
3. Pour the yoghurt mixture into the baking tray and spread in an even layer. Top with the remaining cranberries, coconut and pistachios.
4. Freeze for 4 hours until solid. Break the yoghurt bark into pieces to serve.
NOTE: Keep the bark frozen until ready to serve as it does melt quickly!
