Grilled Lemon Herb Salmon with Roasted Winter Vegetables
Ingredients:
- 4 salmon fillets
- 2 lemons
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste
For the roasted vegetables:
- 2 cups Brussels sprouts, halved
- 2 cups butternut squash, peeled and cubed
- 2 cups cauliflower florets
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and black pepper, to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine the juice of 1 lemon, olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Stir well.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Let the salmon marinate for about 15-20 minutes while you prepare the vegetables.
